Is there an easy way to have this form email to more than one person? Comma separated?

With the Form plugin you can, by passing the email processing action an array:

    process:
        - email:
            from: "{{ config.plugins.email.from }}"
            to:
              - your.email@email.com
              - another.email@email.com
