I was wondering if anyone knows if something like this would be possible with Grav. I assume so. Draftin is a really cool version controlled writing platform.

Yup totally doable with grav.
It would be extraordinarily fantastic to see a tutorial or plugin for setting this up for Grav, Draftin is a great tool for Markdown editing, and it’s simplicity may be preferable to the admin plugin for plain content-editing.
